I found some very yummy smelling apricots at Whole Foods the other day so I decided to make a drink that would celebrate the summer. This is a combination of 2 drink recipes that I found on Pinterest, an apricot lime mojito and an apricot black tea, cuz why not?
For the apricot puree: 6-8 apricots, pitted and chopped, 1.5 cups of water, 0.5 cups of sugar
For the tea: 6 bags of black tea, 4 cups of water
For the cocktail: A small bunch of mint leaves, one small lime, club soda/carbonated water, and rum.
For the apricot puree take 6-8 apricots, pitted and chopped and add it to a pan with 1.5 cups of water and half a cup of sugar. Cook on low heat for about 5 minutes (and I mashed it a bit with a wooden spoon when the apricots started to soften).
Let the apricots cool for a bit and then add to a blender and puree. Put in a container and chill the mixture. (If you're a 'no pulp' kind of person, then you can strain with a fine mesh sieve to get rid of the apricot bits).
I did this step a day in advance to make it easier for myself.
I would also go ahead and steep the black tea in advance as well. Use about 6 tea bags and steep in about 4 cups of boiling water. When you get the desired darkness, take out the tea bags and let the tea cool before storing it in the fridge.
For the Apricot Black Tea Mojito:
Take some mint leaves and a small wedge of lime and muddle them in the glass to release some mint and lime juices. Add equal parts apricot puree, black tea, club soda, and a shot (or two) of rum.
And there you have it. A refreshing apricot tea mojito! The black tea cuts the sweetness and adds some depth to a very fruity cocktail. And of course you can omit the rum and still have a delicious apricot tea. Hope you all have a fun summer weekend and plenty of sunshine!
